2) Allow your diners to enjoy a lighter before a full bodies one such as a Bordeaux.
3) It’s a good idea to serve the highest alcohol content wines at the end of the meal, so that the food will absorb more the alcohol making your guests feel less tipsy

Your food and drink choices should be running like a piece of music . This is the reason behind most restaurants beginning with an amouse bouche then a first course and ending with a sweet course. You have just finished a lovely meal, satisfying really, in a chic new restaurant that just opened in your area. As you begin to replay the evening’s delicacies in your mind you are suddenly interrupted. In front of you is placed the piece de resistance, a perfectly chilled, shimmering glass of Sauterne and a thinly sliced wafer of foie gras.

For many gourmets this single course would be the showstopper, the best of the entire evening. It perfectly embodies the play of sweet and savory that works so well with a dessert wine and a meat.

Dessert wines are an essential niche of the wine making industry but they are not as common as the reds, the whites, and the sparkling wines. And, they go by several different names. In England they are sometimes termed pudding wines and in Australia a dessert wine may be called a stickie.

A Wine By Any Other Name

As there is no single name for a dessert wine, there is no single definition for dessert wines. There are several differing theories on what is and is not a dessert wine depending on where you are in the world. England seems to have the most complicated rules for determining a dessert wine’s status.

To qualify a wine must be sweet but must not be a white fortified sherry drunk before a meal or a red fortified port or Madeira drunk after a meal. A dessert wine in England can only be consumed during the meal.

In the United States the terms are more understandable but more rigid. There is a legal definition for dessert wine which states that any wine with more than 14 percent alcohol by volume is a desert wine.

Dessert wines are known for their high levels of sugar and their sweet taste. There are several different
ways winemakers add sugar during the winemaking process. Some choose to harvest grapes with high sugar content so the sugar is added to the mix naturally. Others choose to add sweetness to their mixture after crushing but before fermentation.

Sussreserve

In Germany dessert wines are submitted to a unique process that is hundreds of years old called Sussreserve. After a wine has completely fermented, must or grape juice, is added. This adds a measure of sweetness to the mixture and lowers the final alcohol content.

There are several reasons for the success of Sussreserve. First and foremost it produces an excellent and smooth dessert wine. It also dilutes the wine to acceptable German standards, no more than 15 percent alcohol by volume. For the winemaker the fermenting process is less complicated because he does not have to stop the process before all the sugars are gone. The success of Sussreserve has made the technique popular in New Zealand and other parts of the world.

Fortified wines are created when the winemaker adds brandy before all the natural sugars in the grapes have fermentated. The vintner’s term for intermingling different wines is mutage. Fortified wines include sweet Sherries such as Pedro Ximenez and Bristol Cream.

A Perfect Pair

A general rule in world of wine and food is that the wine you drink must never be sweeter than the food you eat. This can sometimes be difficult depending on the pairings or tasting menu you are offered. And, there are times, such as with the foie gras and Sauternes that you will gladly throw tradition to the wind.

The perfect pairing, says traditional wine lore, is a juicy and ripe peach with any dessert wine. The soft flesh of the peach is both sweet and tart, and excellent foil for the sweetness of the dessert wine. In Italy a traditional dessert pairs bitter almond cookies with a classic dessert wine, Vin Santo. The cookies are served on a plate around the wine glass for dipping in the wine.

As with all wines it is important to choose your own favorites. Purchase several recommended bottles and try pairing them at home with different foods. Bon Appétit!

London’s Top Five Bars

Even in the current recession new bars spring up like weeds. Their highly paid PRs ensure they get at least their hour in the sun and what new bar does not promise the earth?  How then can the discerning drinker sort the wheat from the chaff?  Well below is an insiders guide to London’s bar land.

Making a list of the best bars in London is of course in part a nonsense . The requirements of say a hip young clubber, cocktail aficionado and a gourmet are all going to be very. And that’s before getting into the whole bar vs bar restaurant, bar vs bar club, gay vs straight and public vs private members clubs issue. Below are what I call my five “best of breed” bars .

I make no attempt to crown one “best of show” because as any grocer  will tell you you cannot compare apples and pears.

Peacock Bar – best for entertainment www-the-peacock-bar.co.uk

Now I have to confess to some bias here as I book the club and helped create it. However in my defense Peacock Bar has been rated Best London Cabaret Venue, Best London Burlesque Show as well as Top Birthday Party Venue by ViewLondon [plus won just about every other award under the sun in the last six months including Top London Small Venue from Function Fixers and Spoonfed]. Our programming is very much musical comedy sketches /social commentary in the finest Kinks style After we have cheesy 80s, 90s, 00s till 2.30am with top Djs like Dave DiskoJuice. We also try and program seasonally so for Christmas we are presenting ” Christmas Lunch and Christmas Dinner with a difference with free burlesque and cabaret – put your boss on stage and humiliate him! Particularly well suited for birthday party, Christmas party, hen party and stag party bookings. Should Peacock Bar be rated best for Entertainment? Well where else in London can you get great cocktails, burlesque, cabaret and Djs till 2.in the morning all under one roof!  Runners up Inigo for electronic music and Hawley Arms for live bands.

Vinoteca – Best for wines

I almost did not include this bar because I was initially uneasy about its almost pure wine focus making it completely unlike any other bar I am aware of except possibly Vinopolis (whch isn’t really a bar anyway more a glorified supermarket not my cup of tea at all).
The wine list is a outstanding with a vast range to choose from including several many unusual options by the glass and this is what sets it apart from every other bar and restaurant in London where you have to purchase from the bottle. It is not possible to give justice to the breadth of the wine list in terms of grape varieties, countries and price points. Just go there.
Putting the wines aside I quite like the distressed brick like simplicity (think Smiths of Smithfield), food (suitably plain) offering and overall bar atmosphere. Runners up any Michelin restaurant who invariably have much better wines than any bar but especially Gavroche
It is the wine list that is the star at Vinoteca

Lab – best for cocktails
What Vinoteca is to wines Lab is to cocktails but like Vinoteca it is very much a one trick pony but hey what a trick! A very convenient position in the middle of Soho is a somewhat spoilt by a having to go into a rather dingy and low ceilinged basement (ignore the ground floor which is pokey and reminiscent of an  airport lounge) . The atmosphere can also be rather flat with too many out of towners trying out the excellent cocktails before moving onto dinner. The food average at best. Entertainment is just a CD player. However Lab has consistently produced the highest quality of cocktails in London bar none for at least the last five years and manages to do so in a non stuffy way (please note various hotel bars I prefer not to publicize). That for me means Lab gets my vote as one of London’s Top Five Bars. Runners up none spring to mine but a list of pretenders to the throne would be  endless

Loungelover – best for style
You either love it or you hate but everyone who has any sense of style loves it. Picture this a room are taken up by seating, which is mostly regency-style chairs with low, candlelit tables, each with a four foot champagne. The bar area features high glass fronted bookshelves filled up not with books, but with wine and glasses. Opposite the main room is an antiquities room and VIP area (also used for performances) also serves as a green room for any performers. The very back of the room is the red section of Loungelover. Decked out entirely in red, even down to red tinted windows, this area surely has only one purpose – seduction. And it works the drinks and food are first rate albeit on the pricey side. Runners up on the style front Ziegfrieds and Lost Society

The Library and Garden Room – best hotel bar
Not really my thing but for any US investment bankers reading this article get on down their fast. The Library at the Lanesborough Hotel conjures up drinking men’s clubs from regency times, with wall to wall books and high ceilings and though you won’t find old lords snoring in the corner, you will find a standard of service unknown since colonial days. Following a refurbishment, the Lanesborough has created The Garden Room, for those who believe the life went out of the London bar scene along with the smoke. An extensive collection of Cuban cigars is offered for those who want to complete their evening in style. Runners up Met bar and Zetters

For those who do a lot of entertaining, it’s hard to come up with new party themes. But the recent popularity of cigars offers a great creative party idea for stressed-out would-be party hosts.


Putting together a good party is hard – and gets harder as you grow older. In college, it’s easy enough to satisfy your guests with, say, a bowlful of pretzels and a keg of beer, but friends burdened with adult responsibilities – a job to get up for, a child to raise – may not want to drive out to your place just for some stale salt-heavy snacks and a can or two of average quality beer. So you’ve got to come up with fun new ideas. But this gets stressful, complex, and sometimes expensive as well. After you’ve tried out your first two or three great inspirations, you may begin to burn out on entertaining all together.

But there’s hope. Try throwing a cigar-sampler party.


Cigars aren’t just your grandfather’s chosen indulgence anymore – they’ve grown increasingly popular during the past fifteen years or so. After bottoming out during the 1980s, cigars became the break of choice for a well-educated, younger demographic, even as other forms of smoking went into decline. They’re just luxurious enough to feel like the break you deserve, but, since they’re designed to be smoked slowly, one at a time, and in moderation (unlike cigarettes), they won’t break the bank. Their infinite differences in taste offer the pleasures of connoisseurship as well: experienced smokers learn to enjoy the differences between double claro cigars (light and generally dry-tasting, with very tan outer wrappers) and maduros (dark brown in color and sweetish), between the great cigars of Nicaragua and those of the Dominican Republic or Turkey. A cigar-themed party makes sense if your friends are smokers, and it also makes sense for those who aren’t (as long as, you make sure not to invite anybody who’s passionately anti-smoking or allergic to tobacco).


Here are some tips on throwing a cigar-themed party:


1) Buy a sampler or two of premium cigars, until you have enough to cover the number of planned guests. (Keep the guest list small – you’ll have better-quality interactions, and you’ll keep the party affordable.)

2) Cigar samplers are easy to buy online, but be careful. Some cigar stores “lead off” with a too-good-to-be-true deal – an inexpensive sampler labeled “premium.” Usually these cheap “premium” platters actually contain only a few top cigars, and are then rounded out with cigar pawns – cheaply-made knockoff cigars. Make sure that your sampler comes from a high-quality cigar shop or online store, and that you know what you’re getting.


3) Once you have your premium-cigar sampler, assign one cigar to each guest.


4) On the night of the party, serve simple snacks before you serve the cigars. (Cigars tend not to go well with ultra-creamy or rich foods.) Hard cheeses, dark chocolates, fruit, coffee, and fine red wines or beers are recommended. Remember – avoid anything too rich!


5) After folks have eaten and had a few drinks, bring out the cigars. Have everyone head outside with his or her assigned cigar and a drink; light everyone’s cigar, and tell them to smoke up. You’ll have given all your guests something new to talk about.


6) If desired, encourage your guests to bring their own cigars, which can be collected and served as part of a “second round” later. Guests could compare the tastes of their two assigned cigars. You could even encourage one of your guests to bring some non-premium cigars, even off-brand gas-station cigars, as a gaga – though only if you’re going for a second round of smoking!


Experienced cigar smokers will enjoy the chance to share their enthusiasm with others. New smokers and nonsmokers will be trying and enjoying something new.

Remember when lighting to cut the cap of the cigar, then, using a wooden match or a zippo lighter or other full flame (not a paper match), turn the end of the cigar in the flame a full 360 degrees until every part of it is lit. Remind your guests who haven’t smoked cigars before that they shouldn’t inhale – this isn’t a cigarette! Pull the smoke into your mouth and taste it thoroughly without allowing it into your lungs. Remember, it’s about the taste.

Next is humility. It should have 70% humility in your storage area. This factor affects the label and the cork of the wine. Third is the angle of the  wine while it is stored . Yes, the angle of the wine in the storage area is important too. The wine should be in contact with it’s cork so it won’t dry out. In the previous paragraph i have said that the air can ruin the wine so that means the cork must be in good shape to protect it from the said element.

The last is the storage area. the storage area must be stable and free from any vibration or plate tectonic. Yes there is no place in Earth that is free from plate tectonic, but just find an area that had a low percentage of plate tectonic and away from unwanted vibration and movement.

It is very important to be sure about the way you take care and store your wine. Remember, no one in this world want to wait several years just for a taste of a vinegar.

Australian white wines include Chen Blanc, Colombard, Gewurztraminer, Marsanne, Pinot Gris, Riesling, Sauvignon Blanc, Semillon, Verdelho, and Viognier. The Australian Chardonnay continues to be a top export and favourite within the country. It is also used as a base for many of the country’s blended wines.

Australia’s Fortified Wines

Australia’s fortified wines are strengthened or ‘fortified’ by the addition of alcohol. The word fortified comes from the Latin word fortis. Fortified wines go through a similar winemaking process as reds and whites but during the process alcohol is added, usually a brandy.

Australia is quite famous for its liqueur Muscat. Not just any Muscat, a liqueur Muscat is from grapes that have been left on the vine until they are almost raisons. These ripe grapes are used to produce a rich and sweet, partially fermented wine. The liqueur Muscat is from the Victoria region of Australia and is a consistent award winner in global expositions.

Australia’s Sparkling Wines

Sparkling wines are produced by adding carbon dioxide to a bottle of wine. A profusion of tiny bubbles explodes when the sparkling wine is poured into a glass. Australia produces several high quality white sparking wines but the country is especially well known for its one-of-a-kind, red sparkling wine. This unique and offbeat treat is popular domestically and abroad. Australians typically pair it with a hearty holiday meal.

Momma Explains: Wine served per person is more expensive than the average beer cost. That is not including imported or high end beers. However, despite the fact that wine costs more, it has a higher alcohol content and people will drink less. Hopefully all your guests will drink responsibly and have a wonderful time at your festive gathering. Now, since the economy is tight, there are actually great opportunities to make some awesome wine purchases for less. In many locales you can have the wine merchant email you their specials for the month and the sales are well worth checking out. In Pennsylvania , I know the State controls the sales of wine, however they also have some exceptional buys because they purchase in great quantity. If you go into any wine store, the fastest way to find the deals is to ask a knowledgeable employee. Your question is simply” Could you please show me the wines that are rated a 90 or better that are less than $15.00?” They do exist and they will be good. You will need to purchase both white and red for a party. Riesling, Vouvray or a sweet Muscadet are good whites. Shiraz or Syrah and Cabernet blends make good red choices. The trick to purchasing good wine at good prices is to know the ratings and the most reliable rating tasters. I am usually very comfortable with the ratings by the Wine Advocate and the Wine Spectator. While other reliable wine rating individuals exist, I have found these two the best and the most reliable.
